
Chicken Curry with Cabbage Recipe

I am so obsessed with this dish! It has so many delicious flavors and is so easy to make after a long day. You can cook up some couscous, quinoa, or rice if you would like to really round out the meal. I hope you enjoy it!
Ingredients
1 3/4 lbs chicken thighs
1 onion
1/2 cabbage
2 cups half-cut green beans
1-2 oyster mushroom
1 tbsp olive oil
2 cups chicken broth
1 12oz coconut milk can
1-2 tsp curry
1/8 tsp clove powder
1 tsp Unami seasoning (Trader Joe’s)
Salt and pepper
Garlic and onion powder
Bay leaf
Cilantro
Lime
Instructions: Chicken Curry with Cabbage
01. Wash the chicken (I like to add a little lemon juice and salt, and let it sit for 2 minutes then rinse). Pat the chicken dry and add garlic powder, a little salt, pepper, and chicken flavoring (I use Better Than Bouillon Paste), then let it marinate.
02. Heat up olive oil to medium heat, and slightly brown onions, green beans, and veggies of your choice. Add seasoning – garlic, onion powder, curry powder, a smidge of clove powder, cinnamon, a pinch of umami seasoning, salt, and pepper. Add the chicken and let it cook all together.
03. Let the skin get a little brown (don’t forget to scrape the dish!) and add chicken broth, cabbage, and oyster mushrooms. Throw in the bay leaf and bring it to a boil.
04. Add coconut cream and let it simmer for 30 minutes. Serve and add lime juice and garnish with cilantro. Voila!
